Hello everyone! My name is Rome, and I am thrilled to share that I have been diligently working to turn one of my dreams into reality, and it's growing bigger than I ever expected! With the support of my family, friends, and community, my vision has come alive. After three years as a food truck, we can't wait for the next three years and beyond as a restaurant. After three years of serving the community, I am proud to announce the opening of Vegan Vato—a restaurant/food pod inside the new Imperial Hotel. Vegan Vato offers a 100% vegan fusion of Mexican comfort food inspired by New Mexico and California. It's a healthier and tastier alternative to what we know and love, delivering amazing flavors to your tastebuds, belly, and soul. Originating in Albuquerque, NM, our goal is to spread our love for vegan cuisine worldwide.

As a veteran-owned business, I am committed to working with veteran organizations, donating my time, truck, catering services, and a portion of our proceeds to help veterans who have struggled with mental illness and substance abuse to get back on their feet. As a passionate vegan and food lover, my aim is to create, nourish, and inspire through our food. This full-time opportunity as a food pod will allow me to serve you regularly and delve even deeper into my culinary passion. The sky's the limit.

While I may not be perfect, I've learned over the years that my happiness lies in giving back to the universe, the world, and the communities that have supported me on my journey. From the bottom of my heart, I thank you all for your unwavering support and love. Despite the challenges we've faced, I am immensely grateful.
